feat(mainnet): add metrics address and port for Etherfuse and Kiln1 - #1009

Set metrics_address/metrics_port for Etherfuse (21212) and Kiln1 (21211) on 88.211.254.188, and document the optional metrics_address field (defaults to the validator's discovered address) in the README schema. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
