Closes part of #15076 (first PR; pytest on the macOS legs follows separately).

Problem

The macOS builds exclude grpc in vcpkg.json and configure with RESINSIGHT_ENABLE_GRPC=false, so the Mac binaries have no gRPC server and rips cannot connect.

Fix

Remove the !osx platform restriction for grpc and enable gRPC in ResInsightMac.yml with the same Python options as ResInsightWithCache.yml. The vcpkg grpc port now builds on both runners without further changes.

Testing

ResInsight Mac Build on my fork, both legs green: https://github.com/tuna-soup/ResInsight/actions/runs/41042091998. Both artifacts (arm64 and x64) contain the gRPC server (RESINSIGHT_GRPC_PORT), generated_classes.py produced by the Mac binary itself, and the Python folder; ResInsight-tests passes.
