docs: add Engy AI endpoint

Summary

Adds Engy to the AI Endpoints list as a pre-configured OpenAI-compatible custom endpoint.

Engy (https://engy.ai/) is a verified OpenAI-compatible inference API (https://api.engy.ai/v1) with zero data retention by default. It exposes a public /v1/models feed, so the example uses fetch: true for auto-discovery.

• Provider icon registration (same pattern as OpenRouter / Gonka)
