The snapshot-converter of cardano-node 11.2.0 requires the Byron, Shelley, Alonzo and Conway genesis hashes.

Fixes the supported Cardano node version, restructures the entries by feature, lists the removals first and moves the on-chain protocol configuration to the stable entries. Anticipates the Cardano node '11.2' entry of PR #3614.
