Subject: [PATCH] Remove the broken Docker Hub workflow and version.txt

docker-image.yml built a Dockerfile that no longer exists (renamed in
March 2025) and, because GitHub ignores path filters on tag pushes, ran
and failed on the v1.0.1 tag. Demo images are built per docs/deploy.md
and stored in ECR, so the workflow is dropped together with version.txt,
its only consumer. setup.py is now the single version number and matches
the v1.0.1 release.
